A deliciously creamy, and luxurious chocolate chia seed parfait. It’s packed with fibre and a whole tonne of nutrients so it’s satisfying and great for any time of the day.
Ingredients you will need:
For the Pudding
2 Tbsp Chia Seeds
1 cup milk (oat, almond, coconut, soy)
1 Tbsp Maple Syrup
2 Tsp DA Elixir of choice (we used Stress Elixir)
1 Tsp cinnamon
For the Chocolate Mousse
1/2 cup Coconut Yoghurt
2 Tbsp Maple Syrup
2 Tbsp Cacao Powder
On the Top
A Banana sliced into coins
Putting it all Together
Mix all the chia pudding ingredients together in a bowl and leave to soak for at least 1 hour, preferably overnight.
To make the mousse, place the avocado, coconut yoghurt, maple syrup & cacao powder in a blender and blend on high until smooth and creamy
Assemble by filling your glass or bowl 3/4 way full with Chia pudding, then spread over a layer of mousse. Top with banana coins and a sprinkle of cacao nibs.
